I'm starving at work and I know exactly what I'm going to make when I get home. I figured I'd share this recipe with you as it is basically the most amazing salad on earth.I have this salad once or twice a week for a light lunch or a hearty accompaniment to a fresh meal. It's wonderful for you - just packed with good fats, oils, and antioxidants! You can add some chili pepper if you would like a spicier salad, I prefer cilantro and lime juice for a wonderfully bright bite. I love to serve this with a rich, rustic cracker or toasted pita.

Avocado Salad:
- Chop up 2 Avocados and 3 Tomatoes into medium sized chunks. (the larger your pieces the more salad-like this will be, the smaller the more salsa-like)
- Place in bowl with 2tsp of olive oil. Add sprinkling of sea salt; stir to coat.
- Chop up 2 green onion stems and add to bowl.
- Juice one half of a lime, pour over mixture.
- Tear up a few leaves of fresh cilantro to garnish.
- Stir well, adding salt to season if necessary.
- Devour! (:
