
Alright, so I've decided that my goal for this summer is going to be to lose fifteen pounds and get myself back to the size two that I was before I left home for university two years ago. I figure that now that I've told you, the pressure will be on for me to follow through (; Starting from next week, I'll update my (hopeful) weight loss.
One of my favorite things to eat right now is Asparagus. It's impossible to resist when my local market is overflowing with these seasonal summer vegetables! This is how I like to eat mine, especially when the Asparagus is thick with slightly purple heads. It makes a wonderfully light main course (:
Roasted Asparagus with Mushrooms and Pancetta
(this is ridiculously easy)
- Set oven to 400 degrees.
- Snap ends off 2 bundles of asparagus, place in metal bowl.
- Wash, prepare, and quarter 2 small packages of mushrooms, add to bowl.
- Coat asparagus and mushrooms in two tsp of olive oil. Spread out evenly on large baking sheet.
- Add 1/2 cup of diced pancetta.
- Add sprinkling of cashew nuts
- Bake for 15 minutes.
- I like to add fresh cilantro to mine before serving. Delicious!
