3rd Recipe & Weight Update

Kalimera readers ^^ I hope your mondays are going painlessly so far. After my bout with the flu I was actually cheerful at the idea of being able to come into the office today! Funny the things you miss. There's a slight damper on my back-to-work joy, however: it's pouring outside. Clearly Montreal is having issues realizing that it is in fact almost July; this weather definitely belongs in April. I'm sure I was a sight to see this morning as I ninja'd my way out of the car to protect my hair/makeup/white blouse from the downpour. I'm proud to say that I made it up without a hair out of place ^~ triumph!

Definitely due to the flu, (I won't take credit as I really was too weak to work out, and have been surviving on what jello stayed down :|) my weight did excellently! Between now and the last weigh-in I've lost four pounds! Let's see if I can keep it up now that my appetite is back. Maybe the runs will substitute for some of the jello dieting? Hahah.

Last night I was able to eat my first real dinner in quite some time. I love seafood and being on the East coast we get amazing lobster for ridiculously low prices. I decided to capitalize on this with a fabulous lobster salad. I hope you enjoy it as much as I did! The only irritating part is cleaning the lobster, those shells are deadly. It's also pretty graphic so you have to throw your desire to become a vegetarian out the window before you prepare this dish. I'm a suck though and bought a pre-cooked lobster so that I wouldn't have to select my live dinner from one of those horrible grocery store aquariums.

Fresh Lobster Salad with Potatoes and Rosemary

Meat from 1 medium sized lobster
5 red-skinned baby potatoes {Any variety will work, these are my favorite}
Juice from 1 lemon
Drizzle of Extra Virgin Olive Oil
2-3 Stalks Green Onion, chopped.
1 Clove of Garlic, Pressed
Sea Salt & Rosemary to season
  • Remove the flesh from your lobster but be careful as the shells are going to be quite sharp. If you've never made lobster dishes before, here's a handy, picture-filled guide on lobster prep :3
  • Cover the potatoes with cold water in a medium pot and bring to boil. Cook until barely tender (you want them to keep their shape when pricked but lose their crunch), then drain and cool; cut into halves or quarters.
  • Combine potatoes with lobster meat and green onion
  • In medium bowl, whisk lemon juice, olive oil, garlic, & salt.
  • Toss potatoes/lobster with dressing, then add rosemary & toss again.
  • Taste for salt and serve.
This recipe makes enough for 2-3 Miss-sized meals. It only gets better the next day!

I think at this point you're probably beginning to notice a trend. I cook with the freshest ingredients I can get my hands on and try to keep things as healthy as possible :3.
